Ina Garten, the queen of entertaining has done it again. Watermelon, rum, and mint pair together in this fresh and fruity Barefoot Contessa recipe. This recipe serves 6, so gather some friends and enjoy Ina Garten’s Watermelon Mojito on warm summer day or night. Let’s begin!
- 30 large fresh mint leaves
- 3 to 4 thick slices fresh watermelon (2 cups pureed)
- 12 ounces light rum (about 375ML,) such as Don Q or Bacardi
- 1/2 cup of simple syrup
- 3 Limes
- Sprigs of mint and spears of watermelon, for serving
Set six large mint leaves aside, and six small spears of watermelon as garnish. Muddle the remaining the mint leaves. Squeeze the limes and set the juice aside. Remove and discard the rind and seeds of the watermelon, leaving only the fruit. Put the watermelon into a food processor and purée. In a pitcher, combine the muddled mint, 2 cups of puréed watermelon, the rum, simple syrup, and lime juice. Stir the pitcher to combine.
Place ice cubes in 6 glasses and pour the mojito mixture into the glasses. Garnish with remaining sprigs of fresh mint and spears of watermelon. Serve ice cold.
