Fall has officially begun; and so begins the obsession over all things apples, pumpkins, cinnamon and cranberries. These three delicious fall-inspired cocktails are perfect for the crisp nights ahead.
Apple Cider Mimosa
2 tbsp. sugar
1 tbsp. ground cinnamon
1 cup apple cider
1 bottle champagne
On a small plate, combine sugar and cinnamon. Dip champagne flutes in water to wet the rims, then dip in cinnamon sugar mixture. Fill champagne flutes 1/4 full with apple cider, then top off with champagne.
Harry’s Smashing Pumpkin
Ingredients – created by our very own Harry Brigham
2 oz Agave Loco pepper cured tequila (or your own pepper infused tequila)
2 oz Fresh local apple cider
3/4 oz pumpkin spice syrup
2 1/2 oz Shipyard Pumpkinhead Ale (or other pumpkin flavored beer)
In an iced shaker add the tequila, cider and spiced simple syrup. Shake and strain into a chilled cocktail (martini) glass. Top with your favorite pumpkin flavored ale.
Cranberry, Cinnamon Rum Punch
Ingredients (makes 4 cocktails)
2 cups fresh cranberries
2 cups water
2 cups sugar
2 cinnamon sticks
1 cup white rum
1/2 cup lemon juice
1/4 cup orange juice
In a medium-sized saucepan add cranberries, water, sugar, and cinnamon sticks. Bring to a boil over medium-high heat. Reduce to a simmer and continue cooking, stirring occasionally, until the cranberries have burst open and can easily be stirred into the syrup, resulting in a smooth consistency (about 10 minutes). Once done, remove syrup from heat. Fit a large bowl with a fine mesh strainer and strain the simple syrup, leaving all of the large chunks and skin behind. Let cool for at least 10 minutes before using.
When ready to make your cocktails, add 3/4 cup simple syrup, rum, lemon juice, orange juice, and a large handful of ice to a cocktail shaker and shake vigorously for 30 seconds. Divide into 4 glasses and serve at once.
