Cod season is here, which means there’s no better time to make these deliciously simple cod cakes. This light family- secret cod cake recipe is low calorie, high protein, takes less than 30 minutes to make, and tastes great!
Pair with a bright, dry, white wine for a truly decadent evening. Try a Pinot Grigio from Alto Adige like La Lot. Or for something a little richer, consider a fresh white Burgundy. Lightly oaked chardonnay will not overpower the delicate cod cakes, but instead will play on the richness of the dish. Our Henri Darnat Bourgogne Blanc would be an impeccable combination. Now, lets eat!
Local Cod Cake Recipe
- 1 lb. cooked local cod
- 1 egg
- 8- 10 saltine crackers
- 1 ½ tbsp dijon mustard
- 1 ½ tbsp mayonaise
- 1 tbsp old bay seasoning
- ½ tsp sea salt
Place the saltine crackers into a ziplock bag and crush using a rolling pin.
Mix all ingredients together and form into 3 inch patties
Fry in hot olive oil, about 4 minutes on each side, or until golden brown.
Makes approximately 4 cod cakes.
Optional: Serve with horseradish sauce.
